I like Mokas because they are simple and cheaper than an espresso machine. Just go for a medium grind and fill the basket almost until complete, and water up to just below the valve, and you are set. The biggest differential though I'd say is the beans you choose. The best recipes need the best beans, and I love experimentally processed beans with acidic and tangy flavor profiles (DAK has great experimental process beans, in case you don't know this roaster).
